What is Isot?
A unique taste emerges by turning the redness of hot peppers into black with the natural drying or burning process and adding oil and salt.
Isot is one of the most important spices used in Türkiye cuisine. After the hot red peppers are chopped and flaked, they get their black color when they are dried under the sun for 3 days.
According to some, it got its unique taste with the heat of the sun, and according to some, it was called “Heat Grass” because it warms the heart when eaten, and this name has reached today as “Isot”.
It can be used wherever chili pepper is used. In the kitchen, it is used in almost all kinds of dishes except sugary products, especially in many local dishes where red color is desired.
It gives a unique flavor and bitter taste to lahmacun, raw meatballs, kibbeh, various vegetable dishes, chicken, various sauces, meat, soup and similar dishes.
